Menu Plan



Engineer has been studying for two more Engineering exams for the past couple of months.  This past week, he sat the 16 hours worth of exams in Ft. Worth.  He came home exhausted.

What better way to remedy that exhaustion than to be out in the yard that has been neglected while he has been studying.  That may have been my idea.

After being able to sleep in, Diva made blueberry muffins while Engineer and I worked in the yard.  We didn't get it all finished but we made a good effort.  And actually, that fresh air and sense of accomplishment did do him good...that's what I'm telling myself anyway because my yard looks so much nicer.  

One of Diva's classmates has a spook-tacular Halloween party every year which she and I attended while Engineer was out of town.  I am always amazed at the attention to detail that is given to every aspect from the invitations to the decorations to their costumes.  It's a fabulous party!

Diva, as in past years, has various costumes for various events and never can they just be something normal.  This year's party's costume was no different.  She waltzed in about an hour before it was time to go to the party stating that she wanted to be a lily pad.  A what?!

On a less costume-y note, I attended Supper Club sans Engineer (he missed all the fun stuff this week.)  We had a wonderful menu using an Emeril cookbook as inspiration.  We started with Marinated Crab Claws (one of my favorites) and a Shrimp Remoulade Salad.  Then we moved on to Steak Diane, the best Cheese Grits I have ever eaten, and Green Beans done a special way.  To finish,we had a Chocolate Torte (my contribution) and a Banana Foster Bread Pudding - all of the food was delicious!

Speaking of food, this is what we will be having this week:

Sunday - Dinner w/Parents
Monday - Eggplant Parmesan over Pasta w/Sauteed Mushrooms
Tuesday - Spinach & Ricotta Tarts (didn't get to it last week) w/Salad
Wednesday - Black Eyes Peas, Greens, & Corny Dog Muffins
Thursday - Date Night
Friday - French Onion Soup & Gourmet Grilled Cheese
Saturday - Leftovers

  2. I love to do grilled cheese and soup in the winter. One of these days I'm going to try eggplant parm. :-)

    1. Thanks! There are so many ways to meal plan: shop your freezer/pantry, use the week's grocery sale ads, go through your cookbooks, family favorite recipes, monthly, weekly, etc. It's really about finding a plan that works for you. :)
