Menu Plan -Week 16


Last week started with a special meal and ended with a special meal.

Our church's hospitality committee (of which I am a part) donated a big fundraising meal to the "Anything for Anthony" COTA campaign.  We served lots of folks and raised some money.  It was a lovely way to start the week.

Cross Country started back up at Diva's school which meant that I was again "running" (I use the term very loosely) with the children.  Our Schnauzer Greta went with me and because she was pulling me the whole way, her wheezing drowned out my own.  Thank you Greta.

Supper Club was held at The Little Pink House on Saturday.
We had a British themed menu:

Smoked Salmon on a bed of Baby Greens w/Mustard Dill Dressing
Roast Duck w/Sausage & Apricot Stuffing
Potatoes w/Mustard Seeds 
Peas & Carrots
Basil Shortbread w/Strawberry Lemon Basil Mousse
Truffles

It was delicious!

Yesterday was the first day I was able to play in the garden.  I got some of my seeds and seedlings in the ground and am full of anticipation for the the fruits of my labor.  Pickling season anyone?

This is the week of reckoning for me.  I have got to catch up on all correspondence before we start to get really busy.  I know that once we get to May, it is chaos around here and we go into survival mode.  Any thank yous, phone calls that need returning, lesson plans, etc. have to be done this week or else they will slide into June.  

Because I am teaching a frugal food class for the next three weekends, I will be trying out recipes on my peeps.  Keep them in your prayers.  ;)

Here's what we will be eating:

Sunday - Pizza, Salad, Garlic Bread
Monday - Tomato Soup, Grilled Cheese Sandwiches, and Apple Slices
Tuesday - Spaghetti & Meatsauce, Salad, & Garlic Bread
Wednesday - Cuban Sandwiches, Black Bean Salad, and Pineapple Chunks
Thursday - Spaghetti Pie and Salad
Friday - Date Night
Saturday - Leftovers

  2. Roast duck! I've only had it once in my life. Last week the butcher mistakenly tried to give me a special ordered duck. I think this is a sign that I need to venture into duck roasting :)
