Pantry Tomato Soup

I was going to make Laura from Heavenly Homemakers Tomato Soup this last week but instead ran out of time and decided to make my own version.  Engineer said it was really good and far better than Progresso (that's because mine isn't sweet.)  The best thing about this soup is that it can be ready in about 6 minutes using ingredients found in the pantry. 

One thing I will tell you is that I don't buy store brand tomatoes.  We have actually had a taste test and they are indeed inferior to name brand tinned tomatoes.  So buy good 'maters!

Pantry Tomato Soup

2 cans tomatoes
Butter (optional)
Basil
Salt
Pepper (freshly ground please)

Dump the tomatoes in a saucepan.  Add a knob of butter if you'd like.  Sprinkle in basil, salt, & pepper to taste.  Heat it up.  Then take your hand blender and give it a good whizz.  Done.

  3. GREAT RECIPE! I love the simplicity. I really enjoy cooking with kids in the kitchen...it's one of the main activities in my Show Me How book and this tomato soup would be perfect to make with young children. This is a recipe that sounds delicious...I'll definitely try it!

  4. You are so right Ms. Vivian (btw, one of my favorite names of all time.) This simple recipe would be a great one for kiddos to play with. They could even add different spices if they were to use it as a study of different cultures. Or add a little cream and a pinch of brown sugar to sweeten it some. Thanks for stopping by.

  5. I love me some tomato soup with grilled cheese. You know my lack of culinary skills though. I'm guessing that a knob of butter could be likened to a TBS? :-)
