What's Cooking?

This week I have made Radish Relish

Banana Bread

a quiche, stewed apples, and the best pasta sauce ever. (Most of the items went into the freezer.)  Oh, and some Meyer Lemon Curd for a dear friend's birthday.

I also had some leftover condensed milk, a can of peaches, cream, and a graham cracker crust that needed to be used so I sort of whipped up a peaches & cream pie for our Valentine's dessert which turned out pretty well if I do say so myself.

Peaches & Cream Pie

Graham Cracker Crust (pre-made or make your own)
Can of Peaches Slices in Syrup, drained & roughly chopped (keep syrup for another use)
1/4c. Condensed Milk
1c. Heavy Cream
1 tsp. Vanilla

Whip cream, vanilla, and condensed milk until fairly stiff.  Fold in the peaches.  Put into pie shell and freeze.  Take out at the beginning of dinner so it will be easy to cut by dessert.

This is part of Full Plate Thursday.

    1. The pie was super quick and easy - pantry challenge food often is. Please don't think I did everything in one day, I spaced it out over the week...this time. ;)
