Cabbage

Diva's favorite meal in the whole world is my homemade mac n' cheese with cabbage & sausage.  To tell you the truth, it was also one of my favorite meals that my Dad made when I was a kid - it must run in the family.

This is such an simple recipe and everyone seems to love it.

It's all of five ingredients and is a great side dish to accompany heavier foods or as a part of your St. Patrick's Day menu.  Mix leftover cabbage with leftover mashed potatoes and you have the traditional Irish dish Colcannon.

Cooked Cabbage

1 medium sized Head of Cabbage, chopped
1c. Water
Smoked Sausage (links, sliced or Lil' Smokies)
Salt
Pepper

Put all ingredients in a pot.
Cook covered over medium heat for about 30 minutes or until cabbage is cooked through.
Salt & pepper to taste.
(I like my cabbage peppery so I use quite a bit.)
Serve with vinegar pepper sauce and cornbread.
