Menu Plan - Pantry Challenge Week 51

Busy, busy, busy (anyone else read that in the voice of the magician in "Frosty the Snowman"?) that's what we've been this past week.

Diva sang in her school's patron church's service last Sunday which was followed by a reception since it also happened to be a Junior/Senior Daughters of the King Installation.  That night she performed in our church's children's production.

My Aunt came down to speak at our local library and promote her new book so we visited with her for a few days.

The rest of the week held Diva's school Christmas production, piano group lesson and Christmas party, a ride on The Polar Express, World Bazaar at school (she was representing The Philippines), a Christmas cookie baking extravaganza with my Sister-in-Law, and we topped off the week by taking in a performance of Amahl and the Night Visitors where a good friend was one of the leads.

This week looks slightly calmer but still full of Christmas festivities.

Oh, and as for last week's menu plan, psh...it flew out the window.  I think we only followed the plan three times, the rest of the time we pretty much ate with my parents since my Aunt was in town.

This week we may have the chance to relieve the freezer of some of its goods that we tried to use last week.

Sunday - Leftovers
Monday - Dinner with Friends
Tuesday - Pansit Bihon
Wednesday - Nicoise Salad
Thursday -  Stuffed Eggplant & Ratatouille
Friday - Date Night
Saturday - Leftovers

This is part of Menu Plan Monday.
