Menu Plan - Pantry Challenge Week 17
Whew! We just made it through the week. If you read Tuesday's Perfectly Practical tip then you saw how our week started and it hasn't stopped yet.
The week held: multiple dance rehearsals, coffee with an overseas visitor, shots for the animals, voice lesson, piano lesson, piano competition, family visits, cross country twice, week-long standardized testing at Diva's school, church children's program practice, cooked for an old folks lunch at church, cooked for youth group, Engineer developed a cold, and today will top it off with Sunday School, church, and the dance recital. That's on top of the regular household chores and the scheduling of Diva's summer activities (which is almost complete - yea!)
Oh, and the cat was so proud to show off a Cardinal he caught that he brought it in my kitchen and let it loose. Now that was a scene, me trying to save a Cardinal (and my kitchen) from the cat and the dog all the while being careful not to get in the path of the mouth of any one of those creatures.
I am very blessed to live close to my family, like really close, as in around the corner from my parents, less than 1/2 mile away from my brother, and down the street from my Uncle and my cousin. But this week, the busiest week of the year, Engineer was on a business trip and my parents were out of town.
In a blink of an eye, for a couple of days, I went from being a happy housewife with a major support system to a single mom working with a skeleton crew.
For you single moms and moms whose husbands work away, I have something to say to you, "RESPECT!" Running a household, running errands, running your kiddos hither and yon, plain running yourself ragged; I wanted to collapse after the first day of it, how you do it day after day is beyond me.
Never have I appreciated Engineer and my parents presence more than I have this week without them.
This week will be a little slower...my parents are back...and Engineer is home...thank goodness. :) All is right with the universe.
Remember all the freezer cooking that I have been depositing lately? Well, now, the end of the school year, is the time to make some withdrawals.
Sunday - Catfish and all the Trimmings
Monday - Venison Stroganoff over Noodles
Tuesday - Whatever we cook at our French cooking class - I hear it's puff pastry! Mmmm....
Wednesday - Pizza & Salad
Thursday - Turkey Divan over Rice
Friday - Burgers & Fries
Saturday - Spaghetti & Salad
