Boost Your Budget Pantry Challenge Week 2

Boost Your Budget Pantry Challenge

Here are our assets, challenges, and goals for this challenge.

So far, so good.  The fridge, pantry, and freezer look filled to the gills.  I purged the pantry and now all of the items that need to be used quickly are in a laundry basket on the floor of my kitchen.  It's amazing how much food one can pack into those things - the pantry and the laundry basket.  :)  I figure if I am constantly reminded that I need to use up the food, it will get used and far more quickly than if I put it back into the cupboards.  Not a pretty solution, but a practical one.

Shopping report:  I had some ECBs to burn so I did do a little shopping at CVS this week and I wanted a couple of things at Walgreen's.  Also, milk and eggs will be a weekly purchase that I can't skip.  Here are my results for this week:  I have spent a total of  $20.69.  Not too shabby considering it's week one and that is 20% of my budget.  How are you doing with your challenge?

If you think that we will only be eating beans and rice for the month, think again.  Here's our menu plan for this week.

  4. Dear Ladies,
The laundry basket idea is great as a constant reminder to use the items up (as you stub your toe on it walking through the kitchen). ;) Seriously though, when everything is right in front of you in one spot like that, it makes it really easy to come up with a dish or two that incorporates many of the items in the basket.
