Recipe Using Brookshire's Ad

Okay so I know it's a little late in the week to give you a recipe using the ad ingredients but you still have time to run out and grab some of the good deals from Brookshire's before the end of the day. 

On the Menu Ideas post for this week I mentioned French Toast Casserole with Fruit Compote.  If you have never made anything like this before, please try it.  It will probably become one of your go to meals because it is quick, easy, tasty, and inexpensive. 

French Toast Casserole

Bread
Milk
4 Eggs
Cinnamon
Vanilla (and/or Splash of Orange Juice)

Butter a casserole dish.  Rip up the bread into small chunks and put into the casserole dish. 
Beat the eggs and mix with 2c. milk, 1/2 tsp. cinnamon, and 1/2 tsp. vanilla.  Pour the mixture over the bread chunks and mix well.  You want the bread to soak up the liquid and still have some left in the bottom of the dish.  You may need to add a bit more milk. 
Pop it in the oven, covered will foil, at 350F for 20 minutes.  Uncover, then put back in the oven for another 10 minutes or until the middle isn't jiggly.  You could sprinkle a little demerara sugar on top for those last 10 minutes if you wanted to.
Serve with Fruit Compote.

Fruit Compote

Blueberries
Cherries, pitted
1 c. Grape Jelly

Wash the fruit.  Melt the grape jelly in a saucepan.  Throw in the fruit, stir, and bring to a boil.  Remove from heat and serve.
