Menu Plan Monday


Anybody else feel that they are overwhelmed by drowning in a sea of at capacity with the number of recipe clippings and cards collected over the years?  I am going to try very hard to go through one of my card files to get rid of the duds.  But how do I know that they are duds unless I fix them for supper? 
Cue May's Marvelous Menu Plan. 
This month will feature new recipes four out of five nights.  The only hitch in my get-along so to speak, is that my veggies come from a CSA and like Forest Gump, I never know what I'm going to get.  So here's what I'm thinking:  I will make the menu as planned and any unexpected veggies will be cooked and put into the freezer.  We'll see how this works out.  If nothing else, my card file should be a little tidier and my freezer a little fuller.

Monday -  Mayo Pork Chops, Salad w/Tahini Dressing, & Grilled Sweet Potatoes w/Sweet Chili Glaze
Tuesday - Neighborhood Dinner here (Green Enchiladas, Mexican Rice, Beans, Avocado & Celery Salad, and Toasted Coconut/Chocolate Pie)
Wednesday - Greek Pasta Salad. Green Salad, and Potato & Garlic Cakes
Thursday - Mediterranean Salad w/Salmon and Cracked Wheat Salad
Friday - Date Night
