Menu Plan Monday


The Blessings cookbook was a very good one so it warrants its place on the shelf.  That's good because I didn't want to have to be the one to break it to Engineer's Grandma that her church's cookbook was rubbish. 

On Sunday I will be part of a joy of cooking crock-pot style class.  There are several of us involved from a chef, to a nutritionist, to a former health inspector...and then there's little ol' me.  My part is the practical side (naturally) of crock pot cooking.  

To get into the spirit of things, I have decided to pull out a crock pot cookbook   I even let Engineer loose with the picking of the recipes.  There was a little bit of "no, I have no lamb shanks" or "it is not quail season right now" but for the most part, I was able to accommodate his requests.  So thank you EM for this week's menu. 

Monday - Charro Beans w/ Pico de Gallo & Cornbread
Tuesday - FREE Whataburger for supper so I am going to try out Old-Fashioned Oatmeal for breakfast
Wednesday - Sausage & Peppers with Pasta & Salad
Thursday - Vegetarian Black Bean Chili & Cornbread Waffles
Friday - Old-Fashioned Meatloaf with Mashed Potatoes & Green Beans

I am hoping to try out a granola recipe as well so I will have to keep you posted on that one.

  2. Thanks for stopping by! We can all thank Engineer for picking out all those bean recipes. The whole family is quite happy with a big bowl of beans with some pico de gallo on top and served with cornbread. Mmmm... I have to say though, we tried the Charro beans last night and they were so/so. Hopefully tonight's recipe will turn out better.
