Last week...
...we got to spend some time with a sweet friend from Marshall who happened to be getting her hair done over here
...Diva's school had a meet the teacher day as well as a parent orientation
...we had dinner with the family of one of Diva's new friends in our neighborhood
...the Operinos came over for a last summer hurrah

We attended our first church service since moving to Louisiana.  Between one or the other of my people being gone and us being in Marshall for a weekend, we hadn't had a chance to start looking for a church home.  That has been something that I have not looked forward to since the move.  I love our church family in Marshall and it is emotionally difficult to motivate myself to look for a new one.
God has always put us where we needed to be and I trust this time will be no different.

I branched out a bit and started going through loose recipes from Engineer's Granny.  I seem to inherit/acquire recipes and cookbooks...and I'm not complaining about it at all.

Just because I have been going through loose recipes though, does not mean that I have abandoned the mammoth task of going through and purging cookbooks.  (You cannot imagine the amount of dishes I rack up by cooking so many random recipes!)

The latest books to be tested are Menus for a Whole Year of Dinner (1971) Square Meals (1984) and Better Homes & Gardens' Salad Book (1958).  Square Meals is a really interesting read and has some pretty good recipes too; it was the only one that stayed.

This week we will be eating:

Sunday - Impossible Taco Pie, Beans, & Salad
Monday - Salmon in Dill Sauce, Herby New Potatoes, & Peas
Tuesday - Pasta w/Olives & Anchovies and Cottage Spinach Salad
Wednesday - Southern Veggie Plate:  Squash Casserole, Baked Cucumber Slices, Green Salad, Purple Hull Peas, and Cornbread
Thursday - Eggplant Casserole & Salad
Friday - Date Night
Saturday - Dinner w/Friends

  4. What's Eggplant Casserole? We have lots of them coming in from the garden now and I'm always on the hunt for new ways to use them.

  5. I found an old recipe of my Maw-maw's that consisted of cheese, eggs, sage, & breadcrumbs mixed with the eggplant.
