Another week without Diva.  This time she was on a mission trip traveling all over the Republic of Texas.  She comes home tomorrow and we can hardly wait to hear about her experiences.  We will only have a few days though to catch up before she is gone again to church camp.
Diva is one busy young lady.

I am embarrassed to say that Engineer and I don't eat quite so well with Diva gone.  By the time I've canned produce all day, I don't want to make the effort to cook for just the two of us.  Sorry Engineer.

I did manage to clear out another cookbook though last week - a Mexican cookbook from the 70s.  And I have a made a couple of dishes from copycat recipe book that I'm not super thrilled with so it too has one foot out the door.

This week I am going to continue to try out the copycat book but I don't have high hopes.

Monday - Boston Market's Meatloaf, Tomato & Cucumber Salad, & Green Salad w/Olive Garden's dressing
Tuesday - Dinner w/Family
Wednesday - Chili's Chicken Enchilada Soup & Salad w/Macaroni Grill's Roasted Garlic & Lemon Vinaigrette
Thursday - Breakfast for Supper featuring KFC's Biscuits
Friday - Date Night
Saturday - Leftovers
