Menu Plan


This last week we had meetings, plays, interviews, appointments, and various and sundry other out-of-the-ordinary activities on top of the regularly schedule stuff.  Busy week's are fun every once and awhile but when you;re coming down with a cold, not so much.

We've made it through to the other side and are looking at a pretty calm week.

On Saturday, I had the pleasure of attending a Women's Conference where the fabulous Jen Hatmaker was the speaker.  I am still ruminating on her sessions.

This week we will be eating:

Sunday - Burritos, Guacamole, Pico de Gallo, & Salad
Monday - Green Olive Tapenade & Mozzarella French Toast Sandwiches, Salad, Pickles, & Chips
Tuesday - Eggplant in Garlic Sauce over Rice w/Carrot Salad
Wednesday - Taquitos, Refried Beans, Mexican Rice
Thursday - Black Eyes Peas, Creamed Spinach, Fried Green Tomatoes, & Cornbread
Friday - Date Night
Saturday - Leftovers
