Tomato & Cucumber Salad



Summer suppers = salads

I've written previously about how I like salads in the summer since the garden is full of bounty and it doesn't heat up my kitchen.

One of our all-time favorite salads is the super simple Tomato & Cucumber Salad:


  • It's beautiful
  • Everything comes from our garden
  • Extremely flavorful and fresh
  • Quick and easy
  • Won't spoil in the heat
  • Can be eaten room temperature or cold 


And quite frankly, I am a sucker for anything with fresh basil in it.

Tomato & Cucumber Salad

2 English Cucumbers, cut into chunks
4 or 5 ripe Tomatoes, cut into chunks
1 White Onion, cut into chunks
Big Handful of Fresh Basil, chopped
Balsamic Vinegar
Freshly Ground Black Pepper (it does make a difference)
Course Salt

Throw all of the vegetables & basil into a bowl.  Mix well.
Sprinkle over the salt & pepper and toss.
Pour over about 1/4c. vinegar, toss to coat and season to taste.

  3. I make this all the time in the summer but use a red onion instead and through some feta cheese in there! YUM
