Menu Plan Week 23


I totally skipped a menu plan last week.

I'm sure most of you Mommas out there can stand in solidarity with me in thinking that the end of the school year is the most bonkers time of the year.

We started off the last week of school with friends on Memorial Day eating bacon burger dogs.  Yes hot dogs wrapped in a burger wrapped in bacon - a cardiologist's nightmare.

Then we just had event after event and activity after activity; our feet hardly touched the ground.


Saying that, the chaos is totally worth it when your kiddo gets their name called many times at the end of the year awards ceremony.  Not that I'm proud or anything.  ;)

This week we plan to relish in the time off before we start our summer activities.

As a US Family Guide blogger, I have been given the opportunity to try out the eMeals Clean Eating Slow Cooker meal plan as well as their lunch plan (review to follow soon).  This is my first week using these plans and I am very much looking forward to it.

Sunday - Leftovers
Monday - Chicken Creole & Rice w/Oven Roasted Okra
Tuesday - Sweet/Hot Ancho Pork Tenderloin, Glazed Carrots & Spinach Salad w/Ginger Dressing
Wednesday - Spaghetti Squash Florentine & Sweet Potato Salad w/Balsamic & Walnuts
Thursday - Honey-Mustard Roasted Chicken w/Cherry Pecan Quinoa Salad
Friday - Chiles Rellenos w/Oven-Baked Sweet Potato Wedges
Saturday - Pork & Potato Hash w/Balsamic Browned Butter Green Beans
