Menu Plan Week 20

I hope you had a wonderful Mother's Day.

Engineer and I spent the day last Saturday cleaning off the back patio and getting it ready for our party this weekend.

At the end of the day, we were able to relax on the swing underneath our trees and look back toward the house and admire the result of all our hard work.

Sunday started with breakfast at church and after church we ate lunch with my parents and my brother's family.  It was a laid back kind of day full of food and naps and very little else.  We so rarely get days like which is why it was the perfect Mother's Day gift.

This week is full of projects, meetings, rehearsals, a funeral, a recital, lessons, and will culminate with a brunch with my girlfriends Saturday morning and a cocktail party in the evening.

This week we are going to have to eat quick and/or easy food because I'm not sure I can devote tons of time to the kitchen this week until it's time to make food for the weekend's events.

We'll be eating:

Sunday - Dinner with family
Monday - Crockpot Chicken Parmesan over Spaghetti w/Salad
Tuesday - Black Eyed Peas, Roasted Sweet Potatoes, & Greens
Wednesday - Potato & Leek Soup
Thursday - Huevos Rancheros & Beans
Friday - Date Night
Saturday - PARTY!!!
