What's Cooking? #MorningStar Farms



Does your family ever go meatless?  

If you have been a reader around here for any length of time, you know that our menu plans often consist of vegetarian meals.  That was something we got used to in Jolly Olde England.  Meat was expensive and we were part of a CSA so it made sense to learn to happily cook, and more importantly, eat vegetarian.

We had tried MorningStar Farms Black Bean patties before and really like them so when I was asked to review them, I was pretty excited.

Here are the pros:  flavorful, convenient, healthy, filling without being heavy
Here are the cons:  a little on the expensive side for just four patties 

For dinner the other night we had black bean sandwiches with a compote of sorts that was a little different.

I looked in the fridge/freezer/pantry to see what was available and noticed that I had spinach that needed to be used, avocado that I had previously frozen, and a can of corn.  Sounded like a recipe for a bean patty topping to me.  :)



Bean Burger Topping

1 can corn, drained
1 bunch spinach
1-2 avocados, mashed
Garlic salt
Cumin
Coriander

Cook spinach and squish out as much water as you can.  Return dry spinach to the pan along with the avocado and corn.  Sprinkle over seasonings to taste.  Mix well.  Heat through.

*Update:  I used the leftover topping up in a frittata which was actually quite tasty as well.

    1. Thanks Miz Helen! What's even better about this recipe is that the leftovers got thrown into some eggs to make a frittata that we had another night. :) Nothing wasted.
