Menu 2013 - Week 11


As it turns out, my sketchy plan from last week was actually followed to a tee.

Some girlfriends and I had a French cooking class last week and made Prune-Stuffed Pork Loin, Potatoes Dauphinois, and Creme Brulee, and yes, it was as good as it sounds.
I had a conference call come up sort of last minute and I had to leave mid-class.  Since I wasn't able to cook all of my food myself, our instructor (the French chef) made my food for me.

Sometimes life is very, very good.

Just to give you an update on the fundraising/awareness campaign, we had a benefit drawing at the rodeo this past weekend which brought in well over $10,000.  That's on top of multiple schools having "Jeans Days" where they pay a fee to be able to wear jeans instead of uniforms which has brought in several thousand dollars from all of the schools.
Chili's had a day where they donated 10% of the takings to the campaign, a lady has started selling scarves on our behalf, and little churches keep sending me "love offerings" for the cause.
I am constantly amazed and humbled by the generosity of people who have donated time, expertise, and money to the campaign.  We are starting to be able to see our goal in sight.

We are asking people to send us pictures of their hands in the shape of a heart.  It has been so uplifting for little Anthony (who is not so fond of the idea of a heart transplant) to see the support from around the world.  He checks the photo album every day to see if there are more pictures.

It's Spring Break and we have no plans which is so nice - I think Diva and I will hibernate.
Our anniversary is this week - number 14 - so maybe we will do something special...most likely we will veg out on the couch all cuddled up together.  Frankly, that sounds like bliss after several weeks of scurrying around.

Monday - Irish Cottage Pie, Carrots, Turnips, & Peas
Tuesday - Lasagna & Salad
Wednesday - Charleston Rice Casserole & Roasted Parsnips
Thursday - Beans, Greens, & Sweet Potatoes
Friday - Date Night
Saturday - Leftovers
