Menu 2013 - Week 3


Man, oh man.
Last week was a cold shower of reality after the warm fuzziness of the holidays.  Back to work, school, and housewifery.

One thing I noticed this wee is that as a housewife, I wouldn't expect to have to attend very many meetings yet every time I turn around I am called to one meeting or another.  This charity or that organization.  It's always something new here at The Little Pink House.  :)

I had the opportunity to teach a small vocal production class on Saturday morning.  And as I told them, opera singers usually sing at 7:30pm NOT 7:30am so it was a little shock to the system.  It was a good class and I hope those in attendance felt the same.

This week is >looks around for any sneak attacks to my calendar< clearer.  I say that with caution.

The eMeals part of my week has been working out okay except for in the prep time.  It takes nearly forever to prep and make the meals on this Clean Eating plan.  The recipes are good I just wish they were laid out a little more clearly as far as the prep is concerned.  Also, it has been a good call to split up the week into 3 eMeals and 4 eMeals.  That way, it gives us a chance to eat the leftovers or some flexibility when we go out with friends.

Monday - Vegetarian Enchiladas & Refried Beans
Tuesday - Pinto Beans & Cornbread
Wednesday - Chicken Noodle Soup
Thursday - Pork Roast & Tabbouleh
Friday - Date Night (friends over for dinner) Meatless Bolognese, Arugala Salad, Parmesan Crisps
Saturday - Leftovers
