What's Cooking?


I saw this recipe on Miz Helen's Full Plate Thursday and I had to try them.

Why these cookies?  I'm so glad you asked.  :)

1.  I have repeatedly admitted to a cookie addiction issue so I am naturally drawn to cookie recipes.
2.  These cookies are called Red Wine Cookies - how could I pass them up?

Much like leftover coffee, we don't tend to have leftover wine, but...

Recently Engineer ordered some wines from a wine club that promotes small vineyards/winemakers.  So far, we can tell why they haven't taken off.  We haven't opened a bottle yet that we have enjoyed.  :(

My countertop had a lineup of mostly unused bottles of odd wines that was starting to cramp my culinary style...and make me sad.

Life is too short for bad wine.

So to be able to marry cookies with wine seemed genius.  Turns out, it is genius.

These cookies are eggless and contain wine.  The recipe blows my mind and the rich dark chocolaty taste blows my tastebuds' minds...well, if they had minds to blow.  Whatever...these cookies are fantastic!

Sooooo...

Since I had more than one bottle to deal with >sigh< I decided to marry not two but three of my favorite things together:  cookies, red wine, and mulling spices.

While in England, the the best thing about winter was that everywhere we went had mulled wine and mince pies.  Those warm spicy flavors taste like the holiday season to us.  When Engineer tried these cookies he declared they were now the official Team Moppins Christmas cookie.

I wanted to recreate that taste of mulled wine using this cookie recipe.  Please note that the spices are to taste really, and I just kept tasting until it was where I wanted it.  I possibly like a spicier kick than most so I have given conservative measurements here but nearly doubled everything for our cookies.  If you want it spicier, then keep adding spices.  :)



Mulled Wine Cookies 

1/2c.  leftover red wine
7 Tbs.  butter, softened
1/2c.  white sugar
1/2c.  brown sugar
1 tsp.  vanilla
1/2 tsp.  cinnamon
1/2 tsp.  ginger
1/4 tsp.  ground cloves
1/4 tsp.  ground allspice
1/4 tsp.  ground cardamom
2 1/2c.  flour (I used whole-wheat since that's what I have on hand)
1 tsp.  baking soda

Mix wine and butter until mostly incorporated.
Mix in both sugars, spices, & vanilla.
Mix in the flour and soda.
Try the mixture and see if it needs anything.
Use a melon baller to scoop out balls of dough onto your parchment lined cookie sheet.
Bake cookies at 350F for 12 minutes.
Enjoy with a steaming hot cuppa.
