What's Cooking?

With the school year comes routine - lovely, stable, routine.  Let's just take a moment to reflect on the serenity of a routine, shall we?

That means the canning and the freezer cooking projects are trailing off and will take a backseat to the cooking of dinner.

For dinner earlier this week I made a yummy alternative to regular cole slaw.

I often pick up cole slaw mix on clearance or on sale for about $1 a bag.  It is such an inexpensive and versatile side dish.  What's funny is that none of the inhabitants of The Little Pink House particularly like standard cole slaw.

Mango Slaw

1 bag Cole Slaw Mix
1 Mango, chopped
1 Tbs. Sesame Oil
1/4 c.  Rice Wine Vinegar (I used the Garlic Flavored Kind)
3 Tbs. Pepper Jelly

Mix the cole slaw and mango in a bowl.
In a saucepan, melt the pepper jelly with the vinegar.  Once melted, whisk in the sesame oil.
Pour the mixture over the cole slaw and toss to coat.

  1. Aahhh! Blessed routine! I may have to include a nap in that routine, at least until I recover from the summer chaos.

    We have been away on vacation and it is really good to be back home and get into a routine, I just manage better when I have one. Your Mango Slaw looks like a great idea, I will have to try it.
