Menu Plan - Pantry Challenge Week 35
Can you believe that we finished our last sweet potato item that I had made from that massive stash of sweet potatoes earlier this year?! We went out with a bang too. It was a Sweet Potato & Cranberry Casserole with an Oat Crumble on top. It was really good and not very sweet. An all-around thumbs up and that doesn't happen all that much with sweet potatoes.
We're still digging through the deep freeze and finding all sorts of stuff I didn't know I had, much less know that I had four of them! Surely I'm not alone there...ah-hem...you know who you are...
My inside freezer is now full of breakfasts for my peeps and I am going to attempt something I've never done before, make ahead lunches. I have been inspired by Amanda over at Saving Myself Silly and her PB&J Biscuit Sandwiches. They are on the list for Thursday's cooking extravaganza.
Diva started school last week which makes this week the first full, seriously getting back into a routine week. Aaaaahhhh....routine. Ne'er was a more beautiful word spoken...
That means not only our daily routine but also my weekly routine of Thursday being my cooking day and Friday my cleaning day. Oh how I have missed those designated days; they bring me great comfort...although, they would bring me even greater comfort with a Gel Pro mat *hint hint Engineer*. ;)

Sunday - Blueberry Pancakes
Monday - Eggplant Casserole, Pasta Salad, and Mango Cole Slaw
Tuesday - Hot dogs, Salad, chips & Guacamole
Wednesday - Venison Roast wrapped in bacon, Ratatouille, and Creamy Leeks
Thursday - Leftovers
Friday - Date Night
Saturday - Leftovers
