Menu Plan Pantry Challenge - Week 27



Today is my birthday.  I know at least 7 other people who share my birthday and tonight we had dinner with 3 of them.  We had a great time and hope to make it a tradition of getting together all of us July first-ers.

Because this is the summer and summer means an abundance of produce and an abundance of produce means canning is in full force which means little else gets cooked in the kitchen, the menu plan went by the wayside.  We did lots of scrounging.

The temperature outside is high 90s to low 100s and it's not much cooler in the house do to the constant pots of simmering this or boiling that.  Not to mention the dishwasher paraphernalia needed to "put up" or the oven keeping my jars hot so they are ready to use.  So by the time I have done all the necessary prep work and subsequent preserving, I don't even want to think about dinner.  That wasn't too much of a problem last week since we were invited to other people's house several times during the week, but I can't count on that being the case every week.  (Although I will happily clear our schedules for the prospect of dinner that I don't have to cook this summer.)  :)

I am going to try to stick to the plan a little better this week but I'm not making any promises.  I still have 1/2 bushel of peaches to put up, as well as about the same amount of peppers, tomatoes, cucumbers, and figs.  And the produce just keeps rolling in....

But you know what they say, you gotta make pickles, chutneys, sauces, jellies, jams, syrups, relishes, and preserves, um, I mean, hay while the sun shines.

Sunday - Out with friends for our birthday supper
Monday - Sweet Potato Chili
Tuesday - Croque Monsieur & Tomato Salad
Wednesday - July 4th food
Thursday - Sausage, Biscuits, & Gravy with Fruit (maybe chocolate gravy if I am caught up with the produce influx)
Friday - Date Night
Saturday - Leftovers

  1. Thanks for stopping by! I'm amazed that you've been doing a pantry challenge since JANUARY???? WOW!!!!! I know what you mean on the temps...we are near 100 almost every day and it makes me want to do NOTHING. ;)

    1. The most amazing part about the challenge is that we are only three people but eat for 6! How can we STILL have so much food! :)
