Menu Plan - Pantry Challenge Week 31


Within the last week, we have all caught a cold.  Every.  Single.  One of us.

This past weekend we all had to power through - I had a frugal living class to co-teach, Engineer and Diva had tickets to see a play along with a backstage tour, and we had dinner plans with my parents and in-laws one night and some friends of ours another night.  Luckily, the overlap has been minimal so whoever is sick can have the attention of the rest of us.

Canning is still going strong although I have been asked regularly when exactly it will end.  I can't imagine my fellow Little Pink House inhabitants not appreciating the agility course I've created throughout the kitchen.  Ducking, diving, and weaving their way through the kitchen to avoid the boxes of jars and buckets of produce apparently is no fun.  Apparently.

Our CSA is on hold for a few weeks while the fall crops are growing.  That is to say that no new veggies are coming in.  Which means that I can really dig in deep to this pantry challenge and not cook what's coming in and instead use what I have already put up...even though there are not many options for cooking this week.  :)

This week we will be eating:

Sunday - Dinner with Friends
Monday - BBQ Sausages, Sweet Potato & Apple Casserole, and Green Bean Casserole
Tuesday - Fundraiser Dinner
Wednesday - Sausage, Eggs, Biscuits & Gravy, and Fruit
Thursday - Leftovers
Friday - Date Night
Saturday - Friends over for Dinner

  1. Delish! Our garden had stopped producing, then we started having rain and cooler temps (from the 90s down to the 80s - HA!) and we've got new blossoms everywhere!

    1. 90s would be cooler temps for us right now. :) Our garden looks very sad right now. I am hoping to get a second planting in the ground before too long. Thanks for stopping by.
