Menu Plan - Pantry Challenge Week 21


We are well into the second quarter of the year and continuing on the pantry challenge. At this point I am oscillating between feelings of annoyance and amusement and amazement.

Annoyance - I can't believe how much food I have bought and stored thinking that is was enough for us to make it for 6 months or so if need be. Even food bought with coupons or on sale costs money, money that could have been used elsewhere instead of building up an unnecessarily big stockpile. Again, the stockpile was not taking over our lives but it was much too big for our little family.

Amusement - Apparently either I thought we would add 6 more people to our family or that we eat like we have 6 more people in our family or that we would need enough food to survive a zombie apocalypse.

Amazement - I truly believe that it is between our CSA and our own garden that we have eaten so well. When we have a bumper crop of something we can it or freeze it so we are never without veggies.

Ultimately, I have to be content with knowing that I have been able to feed my family all this time from what I have had on hand (minus dairy and fruit) and will continue on until I can see the bottom of my freezer (which by the looks of things, will be Christmastime).

Sunday - Golden Turkey Casserole, Squash, & Peas
Monday - BBQ Ribs, Southwestern Sweet Potatoes, & Greens
Tuesday -Spaghetti & Salad
Wednesday - Roast, Roasted Potatoes, & Green Bean Casserole
Thursday - Ham & Apple Casserole, Sweet Potato Croquettes, & Braised Radishes
Friday - Date Night
Saturday - Leftovers
