I told you last week that I made some sweet potato chili.  The Moppins family members are like the three bears when it comes to sweet potatoes:  Engineer Moppins doesn't like them, Pary Moppins is indifferent to them, and Diva Moppins loves them. 

Because sweet potatoes are in season and we get them from our CSA, I have to find creative uses for them so that everyone gets fed and nothing goes to waste.  The best part is, this can be made in the crock pot.

Sweet Potato Chili

4 good sized Sweet Potatoes, Peeled & Cubed
2 cans of diced Tomatoes (any flavor)
1 Tbs. Chili Powder
1 tsp. Mexican Oregano
1 Bell Pepper, Chopped
1 Onion, Chopped
1 c. Water
2 cans Black Beans, Drained
2 Cloves Garlic, Minced
1 Tbs. Chipotle Powder or 1 Chipotle Pepper, Minced

Put sweet potatoes in the bottom of the crock pot.  Then dump everything else on top of them.  Give the whole thing a stir, put the lid on the pot, and turn the crock pot on low for 8 hours.  Stir before serving.  Add more herbs or spices to taste.  Serve over cornbread waffles and sprinkle cheese on top.

  4. Howdy Ms. Mimi! This chili is great for vegetarians (even inner ones) but also substatial enough for those meat and potato types. The beauty of this chili is that after you eat it, you feel nurished but you don't feel heavy. Thanks for stopping by!

  5. Our family is the same way about sweet potatoes. I love them, my daughter can take them or leave them, and my husband hates them...of course there is my son who doesn't really count because all he doesn't seem to like much food period. I would love to try this and I think I will just freeze in single portion sizes for myself :)

  6. This sounds very interesting. None of us have ever been big on sweet potatoes, until I found some super cheap at Aldi and made some sweet potato fries. I have some right now and I was thinking of making chips (something i've never done) but this is another great option though.

  8. Howdy Ms. Amanda! Try a mixture of roasted sweet and white potatoes with some onions and rosemary or thyme. It's a really tasty side dish. I like sweet potato fries too. Good luck making your chips.

  13. I do a similar chile, but I slice and bake the sweet potatoes first, and then add them to the chile at the very end, so they preserve their texture.
