Every Thanksgiving my Momma makes a squash casserole that gets rave reviews. I don't know why we don't have it more often. Try it out and see what your peeps think.
French Market Squash Casserole
2lb. Yellow Squash or 3pkg. Frozen
1 can Cream of Mushroom
1 sm. carton Sour Cream
1 or 2 Carrots, Grated
1 Onion, Chopped
1 sm. jar Pimientos, Chopped
1 pkg. Pepperidge Farm Herb Stuffing Mix (this is important to be brand loyal and specific about the herb stuffing mix, not chicken, not cornbread, herb stuffing)
1 stick Butter, Melted
1 tsp. salt
Dash of White Pepper
Boil squash in salted water for 7 - 10 minutes until soft. Drain; add soup, sour cream, carrots, onion, pimiento, and 1/23 pkg. of stuffing. Mix butter, salt, and pepper. Put in a large casserole dish and top with remaining stuffing. Cook for 45 minutes at 350F.
