Menu Plan Monday


The above picture is kind of what my kitchen has looked like for the past week.  Let my first say that I am not complaining.  The fact that there have been buckets and bags and bowls and boxes of produce covering every surface of my kitchen counters and floor is NOT a nuisance.  The fact that I have stood in the kitchen for nearly three days straight is NOT bothersome.  The fact that I am quickly running out of space to put freshly filled jars of pickles, jams, chutneys, liquors, extracts, and preserves is NOT a problem.  And, I am NOT kidding.  :)  What a blessed situation to be in to enjoy all of the bounty that this wonderful time of year brings. 

Now because of the constant gurgling pot of boiling water for the water bath and the burners being taken up by pots of bubbling preserves and the oven filled with hot jars, not much actual cooking has taken place the past few days.  Truly, I don't see any real cooking happening until Friday when I have to start preparing food for Saturday's brunch.  That being said, this is what I am going to endeavor to fed my family this week.

Monday - Hot Dogs, Chips, & Raw Veggies - Happy Independence Day!!!!!!
Tuesday - I'm out with the girls so it will probably something like Chicken Nuggets, Mixed Veg, and Cherry Tomatoes for my peeps
Wednesday - Italian Pasta Salad
Thursday - Mung Bean & Rice Casserole (didn't get to this last week)
Friday - Date Night

  1. Thank you for this timely reminder. I wrestle with this same thing! I'm doing what I always wanted to do(homemaker and mother) and that is more prestigious than any ordinary career!

  3. Howdy Ms. Cristin! If you want to learn how to can, just ask a friend who has some knowledge on the subject or look up a recipe online and jump in. I would suggest something like strawberry freezer jam to begin. Thanks for stopping by.
