First of all, thank you so much to Miz Helen for featuring me on Full Plate Thursday.

Miz Helen’s Country Cottage


I was walking through Brookshire's produce section the other day and I noticed they had clearanced out colored bell peppers to $1 a bag and each bag held about 8 peppers.  Red, yellow, and orange peppers are about $1.99 each regularly so this was a steal!  I grabbed them up and decided straight away to roast them.

Dish #1
After they were roasted, I cut them into strips and made a roasted pepper salad.  Tossed with olive oil, minced garlic, a splash of balsamic vinegar, salt, & pepper it made for a tasty side dish. 

Dish #2
I had some Swiss chard that needed to be dealt with so the chard, peppers, eggs, cream, Gruyere, and basil got turned into a quiche.

Dish #3
Still more peppers...so the remaining peppers got mixed with pesto and linguine and thrown in the freezer for a healthy convenience meal.
