Make Ahead Pancake Batter



No pictures this week because what was cooking was at 6:15am and nothing is camera ready at that time, not even blueberry pancakes.

I tried a new pancake recipe this week and tweaked it just a tad.  Y'all know I like the "dump" method of cooking and this pancake batter suited my style quite well.

Like so many of my other recipes, this one can be tweaked to suit your tastes or ingredients you have on hand.  I used the whey from making last week's yogurt in the batter in place of buttermilk for a high protein boost.  I've also used leftover eggnog in place of some of the buttermilk.  Use cinnamon or pumpkin pie spice instead of vanilla.  Have fun with the combinations!

The batter was made up and left it in the fridge overnight.  It was super thick and my first pancake came out like a pretty good biscuit but unfortunately, that's not what I was going for.  I used a little more milk to thin it out and they were perfect.

One little tip that you may or may not know, if you are adding fruit, nuts, or chocolate chips to pancakes, while one side is cooking, sprinkle the add-in on top.  That way, your blueberries don't burst and your nuts don't get burned and your chips don't make the pan gooey.

Make Ahead Pancake Batter (Blueberries optional)

3c. Flour
1 1/2 Tbs. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
2 Tbs. Sugar
3 - 4c. Buttermilk, Whey, Sweet Milk, or a combination of these
2 Eggs
2 Tbs. Vegetable Oil
1/2 tsp. Vanilla (optional)
Mix-ins (optional)

Mix all dry ingredients together.  Then add all wet ingredients.  Stir well and put in the fridge overnight.
When you are ready to make the pancakes, spray your cast iron griddle with cooking spray.
Check the batter to make sure it is at a good consistency and pour about 1/4c. of batter onto the hot griddle.  (You'll know the griddle is ready when you sprinkle water on it and the water "dances.")
If you are adding  fruit, nuts, or chips, sprinkle them over the top of the cooking pancake.  Flip it once the edges look dry and there are bubbles forming on the top (about 2 minutes.)  Cook on the other side another minute or so.
