Menu Plan Monday


After a busy weekend of hosting a Coffee Mate house party & having folks over for the Superbowl, I am looking forward to settling down.  We have a few extra things on the agenda for this week which include, a Sweetheart dinner, a fundraiser chili cook off/talent show, and a meeting about a new service that our church is considering offering.  All of those things are low key as far as my personal involvement...except for fitting into a semi-formal dress...ah hem...

It has just occurred to me that I let you know that I would be cooking from the Rachel Ray 30 Minute Meals 1 & 2 cookbooks  in January but didn't let you know if I was keeping them or not.  It is a resounding yes.  Her food is quick, easy, and tasty for the most part...we did have a couple that we decided were a +- but overall, the good outweighed the bad.  There were a few recipes that we missed throughout the month so I am trying to play catch up with those this week.

Here is this week's plan:

Monday - Black Bean Enchiladas, Pico, & Rice
Tuesday - Dinner with the Neighbors
Wednesday - Winter Greens Pizza & Veggie Sticks
Thursday - Onion Soup & Rolls
Friday - Date Night

  1. I have been in a black bean mood lately - this week, we're going to do black bean soup. Black bean enchiladas sound good, too - for a night other than "soup night" of course. :)
