Menu Plan Monday


Oh my goodness!  What the heck happened to last week? 

I feel I lead a fairly relaxed existence whereby the phone doesn't ring much and I can take care of most aspects of my life from my house.  Gracious alive, this week I maybe set foot in my house in 10 minute intervals and that was if I was lucky.  We all know what happens to the house when you are only in it long enough to create a mess and not long enough to clean it up...

This week, after taking a long hard look at the calendar, I am poised to go on lock down for the next two days.  I mean it.  Really...unless of course someone calls and want to go for coffee.  :)

My menu plan even went wack-a-doo so I am going to make it my mission in life to not only make items I didn't make from last week's menu plan but make them in duplicate for the freezer.  I am hoping for a baking day this week too.  I'll let you know if it happens.

So here goes:

Monday - Mac & Cheese w/ Spinach & Sweet Potato Mash
Tuesday - Dinner at the Neighbors (which will probably be a post in itself)
Wednesday - Date Night
Thursday - Spinach Quiche & Salad (Can you tell I have quite a lot of spinach & sweet potatoes to get through?  By the way, does anyone know if you can freeze spinach dip?)
Friday - Steak, Baked Sweet Potatoes, and Salad

There you have it folks, another menu plan amongst the many at Organizing Junkie's Menu Plan Monday.

  2. You can freeze spinach dip but I would recommend you just freeze the spinach.
