Coke Salad

Because you asked for it....

Coke Salad

1 can dark pitted cherries
1 can crushed pineapple
1 big box of black cherry Jell-o
1 can Coke
1 cup chopped pecans
2/3 pkg. cream cheese

Drain the cherries & pineapple and reserve the juice.  Add enough water to the juice to make 2 cups of liquid.  Bring liquid to a boil and dissolve Jell-o in it.  Stir in Coke.  Chill until slightly thickened.

Combine cherries, pineapple, and pecans.  Beat cream cheese until smooth and fluffy; add to fruit mixture.  Fold the cream cheese mixture into the gelatin mixture then pour into a 9x13 pan. 
Chill until firm.

There are lots of variations that include flaked coconut or chopped celery or strawberry cream cheese instead of plain or no nuts.  The main ingredients are always black cherries, pineapple, black cherry Jell-o, Coke, and cream cheese - what else you put in is up to you. 

We southerners love our Jell-o salads!
