Menu Plan Monday
This menu is part of the awesomeness that is Menu Plan Monday over at Organizing Junkie.
Things this week are considerably slower and I am most grateful for that because the freezer where I keep my pre-made goodies is dangerously low on inventory. So I am hoping to have a freezer cooking day or at least a cook-something-for-the-freezer-every-day week. All of those cookies, brownies, cupcakes, casseroles, and muffins have really pulled my tail out of ringer more than once the past couple of weeks so it is time to pay the piper and replenish. Check back later in the week to see what's cooking.
Monday - Cuban Sandwiches, Black Beans, Roast Potatoes, and Mango Salsa
Tuesday - Mushroom Risotto w/ Garlicky Greens and Corny Dog Muffins
Wednesday - My Big Fat Greek Salad made with veggies from our garden (yea!), Tzatziki, and Pita Bread
Thursday - Marinated Chicken Breasts, Carrots, and Green Beans
Friday - Veggie Frittata, Home Fries, & Salad
In other Little Pink House culinary news, the sourdough starter has officially been declared unusable. I had no idea what I was doing with it and I tried different recipes and I tended to the starter, fed it, cooed at it, but nothing worked. I am determined to figure it out though so I will be making some new starter and hope that I can master the art of sourdough...or at least make something edible with it. Any tips or suggestions would be greatly appreciated.
