Black Eyed Peas




I was cleaning out a cupboard (I always feel the need to clean out something when I start to feel overwhelmed which seems counterproductive) and noticed some black eyed peas that needed cooking.

Here's what I did:

Black Eyed Peas

Peas
Ham (or bacon), chopped
Onions, chopped
Celery, chopped
Garlic, chopped
Carrots, chopped
Jalapeno, chopped (optional)
Salt & Pepper to taste

Sort and rinse peas.
Put in a pot and cover with water.  Bring to a boil for 2 minutes then turn off the heat and cover.  Leave for an hour.
Drain and put into a crockpot.  Cover peas with water.
Add ham and vegetables.  Cook on low 6-8 hours.
Season to taste.
Serve with cornbread and jalapeno relish or pepper jelly.

  2. Well Ms. MiMi, I hope you and your guys enjoy! One of my favorite meals in the whole world is my Dad's fried chicken, mashed potatoes (loaded with cream and butter), and black eyed peas. You can also throw in a couple of carrots for some color if you'd like. Thanks for stopping by!
